I did some Googling and the bane of our existence turns out to be Sand Flies. Apparently they're very common in the Caribbean and they're itty bitty, hard to see, and their bites don't necessarily show up right away. Sounds about right.
For some reason, they are not very interested in John, Sam or Ruby, who only have 2-3 bites, but I have about 25-30 and Squig is just covered.
OFF!, Hydrocortisone and Calamine are our best friends.
